We went blueberry picking with some friends. We went to Jones Farm in Connecticut, it was a darling farm. We took this little tractor ride to an area that had some blueberries left, it was one of the last days to pick. The girls loved it and did really well, an hour was about their max. The farmers told us several times to make sure to use the berries or eat them within a day or two. They don’t use any pesticides so they go bad faster than the berries we buy at the store.
Ella and I made muffins while Lola took a nap. I used my favorite Paleo Banana Bread recipe, I have tried so many recipes and this one is THE best! I love it because it doesn’t require any sugar. We threw in about a cup of blueberries and they were tasty. I freeze the muffins and pop them in the toaster oven when we are ready to eat them. I also froze the rest of the berries to throw in smoothies, yogurt and waffles.
This recipe is from Civilized Caveman- I adapted it slightly.
4 ripe bananas (I have used green bananas when on the 21 day sugar detox and they worked great)
4 eggs (I use 6 egg whites when I want to keep them low calories or 2 egg whites/2 whole eggs)
1/2 cup almond butter (you can use peanut butter or any other nut butter)
2 tablespoons melted coconut oil
1/2 cup coconut flour
1 tablespoon cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon vanilla
Pinch of salt
Preheat oven to 350. Combine all the wet ingredients then add in the dry. Stir in any add-ins I did 1 cup blueberries. I think nuts would be great too.
Coat the muffin tins with coconut oil or use muffin liners.
Bake for about 18-20 minutes. Check with a tooth pick when it comes out clean.
I like to eat them with a little coconut butter, if I want a real treat, that stuff is SO good! But they are fantastic plain. You can also use this recipe to make banana bread with, just bake for 50-60 minutes in a bread pan.
