It was my hubbies birthday this past week. He loves cookies more than anyone I have ever met. When he travels for work he makes sure to go and get cookies from the store and some milk to have at night. He has really high metabolism, so we all should hate that he can eat cookies nightly and still stay so lean. So when deciding what to make him for his Birthday dessert, cookies were a given. They had to be regular full fat cookies, not paleo or anything healthy. This is the cookie recipe that I made, they are one of his favorites, Chunky Rocky Mountain Cookies.
I found this recipe a long time ago, they are often called Rocky Mountain Cookies. They have oats, Rice Krispies, a lot of chocolate chips and sugar. A really chunky good cookie.
Here is the recipe-
Chunky Cookies
- 1 cup white sugar
- 1 cup brown sugar (packed down)
- 1 cup butter (soften)
- 2 eggs
- 1 teaspoon vanilla
- 2 cups flour
- ¼ teaspoon salt
- ½ teaspoon baking powder
- 1 teaspoon baking soda
- 2 cups rolled oats
- 2 cups Rice Krispie Cereal
- 2 cups chocolate chips
- Ice-cream if you want to make ice-cream sandwiches after they cool
Preheat your oven to 350 degrees. Cream together the sugars and butter until light and fluffy, I beat mine for a couple minutes. Add in the eggs and vanilla and beat well. Add the flour, salt, baking powder and baking soda to the first mixture and mix. Add in the oats, cereal and chocolate chips, make sure to not over-mix and crush up the cereal too much. Put on your greased or lined baking sheet the desired size you want, mine were about 2 heaping tablespoons of dough, I used a THIS large cookie scoop. Bake for 10 minutes until the cookies are lightly golden brown.
I made Ice-cream Cookie Sandwiches for the Birthday boy. I made them right before serving. I don’t like to eat them when the cookie is frozen, but to save time you could pre-make them and pull them out 10 minutes before serving. I used Coconut Chocolate Ice-cream and it was a hit.
