I posted on my Instagram account the other day that I made all our meals for the entire week after a couple episodes of Gilmore Girls (just started that series on Netflix and like it!). I tried something new in my baking craze. I had been wanting to try sweet potato pie crust for some time now. Who am I kidding, if it involves a sweet potato I want to try it. We make a frittata about once a week either for dinner or for breakfast. I love it because it is full of healthy veggies and protein. I liked the idea of making it into a quiche with a crust and honestly it was just as fast to make or maybe faster with this sweet potato crust, not to mention it kicked up the flavor 10 notches!
Sweet Potato Crust-
I used THIS mandoline and sliced my sweet potatoes thin. Then I sprayed the bottom of my pie dish with some olive oil. Next I just layered all the sweet potatoes on the bottom. Then gave them a spray of olive oil and baked in the oven at 375 for 20 minutes.
I learned that the sweet potatoes shrivel up a little, so to add more sweet potatoes than you think- layer them on top of each other to cover any cracks. But even with the cracks it tasted perfect.
Sweet Potato Crust Quiche-
I sautéed about 2 cups of veggies. I used red pepper, yellow pepper, onion, asparagus and broccoli.
Then I added some sausage I had left over from our Raclette dinner HERE.
Next just mix in your eggs, I used 7 egg whites and 3 whole eggs and about 2 tablespoons of almond milk.
Pour all of that in your sweet potato crust and bake for 30 minutes at 350 degrees.
This meal does freeze well! The rest of the meals I made basically everything from THIS post, spaghetti squash casserole (that I froze), paleo pot pie (I froze the filling) and chili.
Next I want to try THIS sweet potato toast! Really ALL you do is slice a sweet potato and toast it??
