I have a confession…I rarely cook. When my husband is home he does the cooking. I don’t mind cooking, I just don’t like to spend my time doing it. When I do cook I like to make things that don’t take longer than about 30 minutes, so I can move onto something else. My husband travels for weeks at a time in the beginning of the year. I think having a service like Blue Apron deliver all the ingredients for a healthy meal with easy to follow instructions would be a great gift idea for me:) or anyone else that has a busy schedule with not a lot of time to grocery shop- or the desire!
We are used to cooking a homemade meal every night and it is always something healthy. Honestly I could eat the same thing every night and be happy as long as it is healthy. My husband is the opposite- he likes healthy too but he likes variety. I do the grocery shopping and typically bring home the same things. The other night he made a comment about it being the same old salmon, broccoli and sweet potatoes. I cringed because- yep it was. But thankfully I could tell him we were going to try something new this week from Blue Apron. Put a little spice in our life.
I had heard a lot about Blue Apron before and really wanted to try it. I liked the idea that they offer a large selection of recipes that you can pick from that were healthy and made with quality ingredients. When I went online to order our first meals I liked that they had a couple different choices to choose from for the week or we could skip those meals for the week. You can see their menu items HERE.
The meal I made was beef and broccoli with acorn squash. We have made beef and broccoli before but never with acorn squash and I loved it! The recipe even had us pickle the squash- such a great idea. I was also thrilled that it easily fed our family of four with some leftover for my lunch the next day.
One reason I don’t like to cook is because I have kids that get off the school bus right at 4:00, leaving a very limited time to visit with them, do homework and make dinner. I liked the fact that Blue Apron came all package with the ingredients set out and easy instructions made it fun for my girls to make the meal with me.
Our second meal we made was Potato and Béchamel Focaccia Pizzas. The girls were nervous to try a new pizza…but they ended up really liking it, I think because they helped make it.
We had a lot of leftovers from this meal. I really loved the Arugula and Persimmon Salad that was included.

A couple of meals would make the BEST gift in my opinion. Blue Apron recipes are delivered in a refrigerated box so ingredients will stay fresh even if you’re not at home when your package arrives. I would love to get this is a gift! I really want to try their Spicy Black Rice Noodles or Thai Green Coconut Curry…really it all looks so tasty and creative. Let me know how your first meal was!
