I can list about 10 people I know who are are trying to eat better and are giving Whole 30 or Paleo a try with the new year. I have shared before on THIS post that I have eaten Paleo for about 3 years. I was not as strict while I was pregnant and while I have been nursing. I have been eating Paleo for close to three years now. I started with a 6 week challenge at my Crossfit. I thought it would be fun to try something new and push myself. Little did I know how much I would love eating this way. This morning I had 4 ripe bananas sitting on the counter. I thought of waffles and Sunday. Growing up my Dad always made waffles from scratch every Sunday morning before church. He never made them from a box or frozen. The waffles he made were the kind where you whip the egg whites until they form peaks, making your waffles so light an airy. It is nostalgic to me.
