We are BIG muffin fans over here, paleo muffins that is. Something about portioning out a baked good keeps me from over-doing it. And we love to have muffins on hand for a healthy snack for myself and my kids, they make an easy quick breakfast with some eggs. As you know I like to cook about 95% paleo. I just feel so much better when I eat paleo and I know my kids do too. Occasionally we make homemade pizza, popcorn and cookies oh and our easy homemade bread.
