White Bean Chicken Chili

Ingredients
  

  • 3 16 oz cans Northern White Beans (not drained)
  • 2 4 oz cans chopped green chilis
  • 4 cups chicken broth
  • 3 breasts chicken
  • 1 cup carrots (diced)
  • 1 medium onion (diced)
  • 1 tbsp cumin
  • 2 tsp oregano
  • 1/4 tsp cayenne pepper
  • 2 tbsp garlic clove minced
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 cup Monterey jack cheese (shredded) for garnish
  • 1 cup sour cream for garnish
  • 1 bunch cilantro for garnish
  • 1 avocado sliced for garnish
  • 1 salsa for garnish

Instructions
 

  • Add everything to the slow cooker (except for items to garnish)
  • Heat on high for 6 hours
  • Pull out chicken and cut or shred into bites size pieces
  • Garnish each bowl with favorite toppings

Notes

You could cook this on the stovetop over medium heat until veggies are soft and chicken is no longer pink and falls apart (about an hour).
