Mix the flour, salt and yeast until combined in a large bowl.
Add in the water (start with 1 1/2 cups then add more until it isn’t dry, but you don’t want it too wet. Dough should pull up from the sides).
Peel apples and chop into bite size pieces. In a separate bowl coat apples with brown sugar. Pour apples into flour mixture and stir until combined.
Cover with a plate or plastic wrap and let sit for 8 to 24 hours (on the kitchen counter).
Then degas, by stirring it once to get the air out.
Grease your bread pan with oil or butter and place bread dough in your baking pan.
Stir sugar and cinnamon in a small bowl and cover the top of the bread evenly with sugar mixture.
Let bread rise for an hour covered with a dish towel (on the kitchen counter).
Bake at 400 degrees for 30 minutes covered with tin foil or another bread pan. Bake for another 10 minutes uncovered until golden on top.
