Method
- In large Stock Pot heat Olive Oil over Medium High heat. Add Onions, 1/3 Cup Cilantro, Garlic, Black beans, Corn and Carrots Saute for 5 min.
- Add Roasted Tomatoes and spices. Saute for 3 min
- Add Chicken Broth and bring to a boil
- Lower temperature to medium and simmer for 10 min
- Add Chopped Avocados, remove from heat
- Add crushed tortilla chips and serve
