My Favorite Healthy Homemade Granola

Homemade Chocolate Chip Granola Recipe
Ingredients
7 cups rolled oats (quick oats work great too)
1 cup chopped nuts (walnut, pecans, almonds, and cashews are all delicious! For a nut-free version, simply replace the nuts with an additional cup of oats.)
⅔ cup pure maple syrup
⅔ cup coconut oil
⅔ cup honey
2 tablespoons cinnamon
1 teaspoon vanilla
1 cup mini chocolate chips
Directions
- Preheat your oven to 350°F.
- In a large bowl, combine the oats and chopped nuts.
- In a saucepan over medium heat, combine the maple syrup, coconut oil, honey, cinnamon, and vanilla. Heat just until everything is melted and well combined.
- Spread the granola onto a baking sheet lined with a silicone baking mat or parchment paper.
- Bake for 15 minutes, then remove from the oven and gently flip or stir the granola so it bakes evenly.
- Return to the oven for another 10–15 minutes, or until golden brown.
- Let the granola cool until slightly warm, sprinkle mini chocolate chips, do not stir. Let cool completely. Granola gets even crispier as it cools!
- Store the granola in an airtight container in the refrigerator for several weeks, or freeze it for even longer.
