Ella asks for the same meal every week, white bean chicken chili. She LOVES it. All our kids do! I have seen lots of variations of this classic white bean chicken chili recipe. You could add more broth to make it more like a soup, but we like a chili consistency to dip a chip in. We also add carrots to our version. We make most our soups and chilis in a slow cooker, for a quick easy dinner. I actually prefer to only make meals that require one pan or one pot, does that mean I am lazy or efficient?? Maybe don’t answer that. ha! I am sharing that white bean chicken chili recipe and some of our favorite small appliances from Walmart.

Slow Cooker White Bean Chicken Chili Recipe-


White Bean Chicken Chili
Ingredients
- 3 16 oz cans Northern White Beans (not drained)
- 2 4 oz cans chopped green chilis
- 4 cups chicken broth
- 3 breasts chicken
- 1 cup carrots (diced)
- 1 medium onion (diced)
- 1 tbsp cumin
- 2 tsp oregano
- 1/4 tsp cayenne pepper
- 2 tbsp garlic clove minced
- 1 tsp salt
- 1/2 tsp pepper
- 1 cup Monterey jack cheese (shredded) for garnish
- 1 cup sour cream for garnish
- 1 bunch cilantro for garnish
- 1 avocado sliced for garnish
- 1 salsa for garnish
Instructions
- Add everything to the slow cooker (except for items to garnish)
- Heat on high for 6 hours
- Pull out chicken and cut or shred into bites size pieces
- Garnish each bowl with favorite toppings
Notes
You could cook this on the stovetop over medium heat until veggies are soft and chicken is no longer pink and falls apart (about an hour).
