These breakfast burritos are one of my kids’ most requested breakfasts. We eat them so much that we usually just make a big batch and freeze the rest. They are simple, but delicious and packed with protein. A favorite before school breakfast!

I feel silly even writing this into a blog post, but I get asked for the “recipe” daily! It is honestly so easy. But the best part is you can add anything extra you want to these from extra veggies, chopped potatoes from dinner last night!

Everything you’ll need to make these breakfast burritos. I always add sausage, eggs, and cheese inside an almond flour tortilla. Recently started adding cottage cheese to pack in more protein, and you can’t even taste it!

You can use any tortillas you prefer! We personally love Siete Almond tortillas, I like that they are grain free and made with almonds. They have a good flavor and hold their form nicely. Nice gluten free option. I do like to warm them up first before adding the filling, this prevents the tortillas from cracking.

In a bowl I whisk up my eggs first. Then, (totally optional) I add in cottage cheese (if your cottage cheese is a little liquid then make sure to drain the liquid out). You really can’t taste the cottage cheese. It adds more protein and makes the eggs fluffier, but not runny.

Then I pour egg mixture over the pound of cooked sausage and cook until eggs are done. You could add spinach, peppers, chilies, whatever you love! I want my kids to eat these and they don’t like it when I add veggies. We keep it simple.

Time to assemble! Add a heaping 1/4 cup of filling to a tortilla. Add cheese to both side of tortilla and roll up.

Lay seam side down, placing each burrito side by side touching to help keep closed.

1 pound sausage
12 Eggs
2 cups Cheddar Cheese
1/2 cup Cottage Cheese
15- 6 inch Tortilla’s
Directions
- Cook sausage.
- Whisk eggs together then mix in cottage cheese. Add to cooked sausage and cook well.
- Assemble. Add 1/4 heaping cup filling, cheese on both sides of tortilla. Roll and lay seam side down on cooking pan.
- On broil setting, cook in oven for 3-5 minutes.
- Freeze leftovers, reheat in oven for 10 minutes at 350 degrees.
Notes
- These are just basic breakfast burritos. You can add veggies or whatever else your family enjoys!

Eat right away or you can put in a freezer bag for later so anyone can grab and reheat as needed. I like to store in these reusable silicone bags. When I reheat the breakfast burritos I reheat in the oven or in the wonder oven for a couple minutes.
