Did you know that today, August 3rd is National Watermelon Day? I have had THIS Watermelon Cake Recipe pined for a long time on Pinterest. I have thought about making it so many times, specifically for one of my daughters birthday, but they requested a real cake rather than watermelon (weird!). I have a calendar that I got free in the mail and it has all of the made-up Holidays listed. Like national doughnut day, sibling day, root beer float day (which is actually this Friday 8-5). I noticed that August 3rd was national watermelon day. What a perfect excuse to try this cake! So here is our version of it…through pictures! Because it was that easy.
There are better ways to do this….but hey it worked for me!
After I carved the watermelon I had to figure out a cake topper. I made the little wreath out of some boxwood plants in my yard. Just wove it into a round shape and layered a couple of branches over it. I then sandwiched it in-between two chopsticks with hot glue and I had an instant and free cake topper!
We got all of our cake decorating supplies ready. Those little flower shaped cookies are Anna’s Almond Swedish Thins, they are addicting….I warned you.
We whipped up some real cream for our frosting. You could use Cool Whip for a quick easy frosting. Or if you want to go non-dairy you could use coconut milk. I buy a can of coconut milk and refrigerate it overnight. Then scrap the cream off that separates from the milk and whip it up just like whipped cream and add some honey to it to sweeten it. My tip for applying the cream to the watermelon is to go light on the sides and then really layer it on the top. I tried going heavy on the sides and it was falling off. I also read AFTER I frosted mine to dab it down with a cloth or paper towels so the cream adheres better.
We had a lot of fun making this cake. I don’t think I should say “making” it was basically decorating. The girls loved it. I would say this was a success! Happy Watermelon Day!
