I am joining Annie from Zevy Joy and a talented group of bloggers today to share some Easter inspiration! My daughter made me worried yesterday saying Easter was this coming Sunday! After brief panic I realized…it is not, we have about two weeks. But her little mistake started a fire under me to get Easter baskets put together and make a plan for our Easter Sunday. We go to church every Sunday, but really look forward to church on Easter Sunday. After church when we lived in Utah we would go to brunch on one side of the family then dinner at the other and Easter egg hunts at both. Now we are living away from family, we need to start our own traditions. I look forward to seeing what all the other bloggers are sharing to inspire some Easter inspiration and new traditions (you can link to the other bloggers at the end of my post).
I wanted to share an Easter tradition- a favorite Coconut Pineapple Cake. But I made a change to the traditional cake my mom makes every year. I LOVE that Coconut Pineapple cake, but I know it is not the best for me so I made it Paleo and Gluten Free, all natural ingredients that you know exactly what you are putting into your body. I personally could not stop eating this cake! I made it Sunday morning to have for dessert Sunday night- but I had my dessert at 11 am and again at night:) My kids and hubby loved the cake too. I did have a few tests that I had to throw out, but the end result it so tasty! Just the right amount of coconut and pineapple. We added some strawberries and it reminded us of a strawberry shortcake too!
It is really moist and also fluffy at the same time. The coconut flour adds the right amount of coconut flavor mixed with the fresh pineapple- reminds me of Easter and so many wonderful Easter memories.
I created a simple bunting Easter banner that you can print out at the bottom of the post. I attached some fresh mint leaves from a plant I had to either end of the banner. You could cut some fresh grass or greens from your yard too.
I really don’t do much seasonal decor besides Christmas. In a small house there really isn’t any space to display it or store it. (You can read more about our kitchen and banquette HERE).
I did create this simple Easter bunting banner that matches the cake topper in a larger version you can print and hang up somewhere in your home on Easter.
To me the Holidays are becoming more about the reason for the celebration- Jesus and my family. Good food mixed in is a must if I do say so myself. And a healthy recipe that you don’t have to regret at the end of the day is even better.
Paleo Coconut Pineapple Cake Recipe
Ingredients
- 2 cups almond flour
- 3/4 cup coconut flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 2/3 cup honey
- 2/3 cup coconut oil (melted)
- 4 eggs
- 3/4 cup unsweetened full-fat coconut milk
- 1/4 cup crushed pineapple with juice
Topping Ingredients
- 1/2 cup crushed pineapple (juice drained)
- 1/2 cup full-fat coconut milk (make sure to shake can before opening or stir well)
- Unsweetened Shredded Coconut
- Coconut Flakes
- Strawberries
Directions
Heat oven to 350 degrees
Melt coconut oil and honey together over medium heat until combined and melted.
Beat eggs. Add in coconut milk and the coconut oil and honey mixture.
Mix in almond flour, coconut flour, salt and baking soda until combined. Fold in drained pineapple.
Grease two 8” cake pans. Divide cake batter into pans evenly.
Bake for 20 minutes, until top is light golden brown and baked through.
Poke cake with a straw all over the top.
Pour 1/4 cup crushed drained pineapple over the top of one of the 8” cake. Then slowly pour 1/4 cup of coconut milk over the top of the crushed pineapple.
Place the other cake round on the top of the first cake and repeat with the remaining pineapple and coconut milk.
Top with sliced strawberries, drizzle coconut milk over the top and garnish with shredded coconut and coconut flakes.
