We are BIG muffin fans over here, paleo muffins that is. Something about portioning out a baked good keeps me from over-doing it. And we love to have muffins on hand for a healthy snack for myself and my kids, they make an easy quick breakfast with some eggs. As you know I like to cook about 95% paleo. I just feel so much better when I eat paleo and I know my kids do too. Occasionally we make homemade pizza, popcorn and cookies oh and our easy homemade bread. If we want to stick to healthy eating, then prep-work is key.
I had some extra bananas laying around and I thought I would try my favorite paleo waffle recipe as muffins. They turned out perfect. Nice and full, with great flavor. I doubled the recipe and froze half of them. Thought I would share the love!
Paleo Pumpkin Muffins
- 2 ripe bananas
- 1/2 cup pumpkin puree
- 2 eggs
- 2 egg whites
- 1/2 cup almond butter
- 1/4 cup coconut flour
- 2 scoops chocolate protein powder or vanilla
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon vanilla
- 1 pinch of salt
- 1/2 cup chocolate chips (optional)
Mix bananas, pumpkin puree, eggs and almond butter until bananas are broken down and everything is well combined. Add in the rest of the ingredients. Bake at 350 degrees for 18 minutes.
I am a picky paleo baker. I don’t like recipes that have too much almond flour or coconut flour or eggs or natural sweeteners. I notice that some paleo recipes over use those ingredients and they come out too heavy, too eggy or too sweet.
