I love a healthy and tasty salad! One of my favorite salads is at a local Utah restaurant called Red Rock. They make a Warm Shrimp Salad that is so tasty! We made a dup of it with our tasty Lemon Dressing. The dressing is basically a one size, fits all, dressing! I haven’t met a salad yet that this didn’t taste good on. With its tangy, bright lemon flavor, it’ll blow away any store bought dressing. It’s a dressing that you’ll use for so much more than salad. Sure, it livens up greens, but it also makes roasted veggies flavorful, adds excitement to grain bowls, and more. Sharing salad recipe too. It really isn’t a recipe…just a list of things you must add to spinach!
Start with spinach, layer grapefruit, sweet potatoes (cooked and peeled), pistachios, crumbled gorgonzola cheese and cooked shrimp! Then top with the best Lemon Dressing! This salad is paleo (minus the cheese), very healthy and full of flavor. My favorite part is the grapefruit! Oranges would be good too.

Warm Shrimp Salad with Paleo Lemon Salad Dressing
Warm Shrimp Salad
- 1 Bag Spinach
- 1 Sweet Potatoes peeled, cooked and cubbed
- 1 Grapefruit or buy pre-sliced
- 1/2 cup Pistachios
- 1/4 cup Gorgonzola Cheese crumbled
- .5 lb Shrimp cooked
- 3 tbsp Olive Oil
- 1 tsp Dijon Mustard
- 1 tbsp Lemon Juice fresh is best!
- 1 tsp Honey
- 2 tsp White Vinegar
- 1 clove Garlic minced
- 1/2 tsp Salt
- Mix together salad ingredients
- Blend in blender all the dressing ingredients
- Toss salad before serving and enjoy!
