If you’ve ever had our fruit cookies you know we love a refreshing dessert this time of year! Something about a treat with whipped frosting and fruit that is tasty but also super cute to decorate with. And that you can keep cool in the fridge! This dessert will become a quick favorite, it is so easy. You’ll have it made from start to finish in an hour and tastes so good that everyone will ask for the recipe!

Easy Fruit Dessert Bars

minutesCake Bar Ingredients
2 boxes Yellow Cake mix (just the dry package)
2 sticks butter, melted
2 eggs
- Frosting Ingredients
8 oz cream cheese, softened
1 cup powdered sugar
1 Tbs juice from lemon or lemon juice
2 cups heavy whipping cream
Directions
- Mix yellow cake mixes, melted butter and eggs together
- Butter a cookie sheet
- Spread evenly on cookie sheet (size 18×13. I wouldn’t do a smaller pan-bars would be very thick)
- Bake at 350 degrees for 10 min (we like the top a little golden brown)
- Remove from oven and press down bars with a spatula
- Let cool completely
- Directions for Whipped Frosting
- In a stand mixer bowl combine cream cheese, powdered sugar and lemon juice. Mix
- Slowly add 2 cups heavy whipping cream to mixer.
- Mix on high until you get a fluffy, thick whipped frosting.
- Spread evenly over cooled cake bars
- Add fruit to top!
