My mom is one of the best cooks I know (alongside Kevin)! The other day Kevin and I made a Paleo Teriyaki Noodle Bowl. After, I was talking to my mom and I told her I like how she makes them best and asked her to come over and show me exactly what she does. Like exactly, since she didn’t have a recipe (it was just in her head). Of course I had to share it with you!!! This will be a meal you rotate weekly or monthly. It is a favorite! We made it all in one pan too, The Always Pan (I had gifted one to my mom, grandma, sisters and brother for Christmas! It makes such a good gift, especially for Mother’s Day around the corner!) she brought her pan over so we could make Pot Stickers too.

The Always Pan is Exclusive non-toxic, nonstick ceramic coating made without potentially toxic materials like PFOAs, PTFEs, other PFAs, lead, cadmium, toxic metals, and nanoparticles.

Ingredients
Method
- Marinate Meat in Teriyaki Sauce (minimum 4 hours or overnight)- we like chicken cut into bite size pieces, shrimp or salmon
- Chop veggies into bite size pieces- we like broccoli, asparagus, carrots, coleslaw, broccoli slaw, baby corn, peppers, onions
- Cook Japchae Noodles (sweet potato noodles)- put noodles in boiling water, once softened rinse under cold water then cut noodles with kithcen scisssors noodles into small pieces (about 4-6" long)
- Cook meat over medium heat in a couple tablespoons of olive oil. Remove from heat, put in a separate bowl and sit aside.
- Cook veggies in a couple tablespoons of olive oil over medium heat (in same pan you just cooked meat in). Start cooking the harder veggies first, once softened add some water (1/2 cup) then add smaller softer veggies. Cook until all softened. Remove from heat, put in a separate bowl and sit aside.
- Heat olive oil in same pan, add minced or fresh garlic to pan. Then add noddles and start adding about 1/2 cup of teriyaki sauce (add more to your liking, but don't oversaturate), cook until slightly browned.
- Combine everything together and serve!
Notes

Get your veggies ready! I prefer A LOT of veggies, way more veggies than meat. We like to chop veggies into bite size pieces. Our favorite veggies for this noodle bowl are broccoli, asparagus, carrots, coleslaw, broccoli slaw (Trader Joe’s salad mix), baby corn, peppers, and onions.


These Sweet Potato noodles are SO good. Just 100% sweet potato noodles. You can find Japchae Noodles at most grocery stores or online.

Cook noodles in boiling water, once softened rinse under cold water, then cut noodles with kitchen scissors into small pieces (about 4-6″ long). The Always Pan makes cooking noodles so easy with the steamer basket!

Cook meat over medium heat in a couple tablespoons of olive oil. Remove from heat, put in a separate bowl and set aside. Don’t clean the pan, leave all the seasoning on the pan to cook veggie next!

Cook veggies in a couple tablespoons of olive oil over medium heat (in same pan you just cooked meat in). Start by cooking the harder veggies first, once softened add some water (1/2 cup) then add smaller softer veggies. Cook until all softened. Remove from heat, put in a separate bowl and sit aside.



Heat olive oil in same pan, add minced or fresh garlic to pan. Then add noddles and start adding about 1/2 cup of teriyaki sauce (add more to your liking, but don’t oversaturate), cook until slightly browned.


Combine everyhing together and serve!


We did steam potstickers in these spruce steamers, then brown potstickers in The Always Pan.




PS- that Sweet Chili Sauce is so good with the noodles and the potstickers.
