My sister is one of the greatest humans. Honestly. She has a servants heart. Kevin has been out of town in Abu Dhabi for two weeks, so I flew my sister and nephew out for a couple days to keep us company and help ME survive! She also does all of our hair so it’s a huge win when she comes out. Brittany makes dinner, loves on the kids and spends time with me. We watched A Star Is Born (bought it on Fandango) both of us loved it even though we wish it ended differently. Between all those things she also made cupcakes with my girls and Finn. She makes cupcakes every time she comes. We ask the kids “what do you want to do when Britt comes?” Thinking they will say things like, go to New York. But nope. They just want to make Britt’s famous cupcakes. Sharing her red velvet cupcake recipe and a free printable!





Easy Red Velvet Cupcakes with Fluffy Frosting

1 Box Red Velvet Cake Mix
1 small box (3.9 oz) Instant Chocolate Pudding
1 cup Sour Cream
1/2 cup Milk
1/2 cup Canola Oil (or vegetable)
4 Eggs
1 tsp Vanilla
1 cup Mini Chocolate Chips
- Frosting Ingredients
1 8 oz Cream Cheese
1/2 cup Unsalted Butter
1 tsp Vanilla
4-5 cups Powdered Sugar
2 tbsp Heavy Whipping Cream or Milk
Directions
- Beat your eggs in a separate bowl
- Add all ingredients into a mixing bowl
- Mix ingredients for about 30 seconds
- Scoop 2 tablespoons of batter into individual lined cupcake pan
- Bake at 350 for 16-18 minutes
- Let cool completely before frosting
- Frosting Directions
- Cream the cream cheese and butter for about 1 minute, until blended together. (Both should be room temperature)
- Add the vanilla, milk and 1 cup of the powdered sugar. Slowly mix in the rest of the powdered sugar and beat for like 5 minutes until it is looking more white than yellow .You might need a little more powdered sugar, to get desired consistency. (We like the frosting on the thicker side)
- Frost Cupcakes!
Notes
- You can switch out the red velvet cake mix for devils food cake
- Make sure to refrigerate anything you frost with this frosting
