We made this salad about a week ago, I wanted something that looked pretty for fall. My sister and I were working on it together and we both had to race out the door with our dinner salads to go. As I ate it I
thought “this salad is the best salad I’ve ever had!”. But wondered if I was just really hungry. Then my sister text me about it and I knew this fall salad was a winner and had to share!

I love a salad that not only looks pretty and tastes yummy, but is also good for you! Using kale as the leafy greens packs a good amount of nutrients!

The sweet potatoes add a beautiful fall color and taste, and pomegranates are seasonal for only a short time starting in October. For Halloween, my mom always draws a jack-o-lantern face on pomegranates and gives them to her grandkids. They look forward to it, and I love it’s not candy.

You can really customize this salad how ever you prefer. We did crumbled feta and blanched almonds. But any cheese and nut you love will work great. Same with the pomegranates…swap for craisins, apples, berries, really whatever pretty fruit color and flavor you want.

We add sweet potatoes and grilled chicken too. I like to add extra meat when the salad is the main course, if it’s a side you can leave the meat off or sub it with bacon or any other meat you want.

The real show stopper is the homemade Sweet Maple dressing! Making your own salad dressing really isn’t that hard. Olive oils is usually the base of most homemade salad dressings. This one has apple cider vinegar and maple syrup, making it a real fall treat!

I just made this salad for a group of girlfriends that came over for a visit. Perfect for book club, baby shower, any get together. You can assemble the salad before had or put all the toppings in a bowl and let others decide what they want.


Fall Kale Salad with Sweet Maple Dressing
Ingredients
- 1 bag kale
- 1 large sweet potato, cubed and boiled
- 1 seeded pomegranate
- 1/3 cup crumbled feta
- 1/3 cup blanched almonds
- 2 cups grilled chicken
Sweet Maple Dressing
- 1/2 cup olive oil
- 1/3 cup apple cider vinegar
- 3 Tbsp maple syrup
- 1 Tbsp Dijon mustard
- 2 tsp minced garlic cloves
Instructions
- Layer the salad ingredients first kale, then other toppings.
- For the dressing, add all ingredients to a blender and blend well, store in an airtight jar in refrigerator
- Drizzle kale on salad and mix. Or allow other to dress their own salad.
