We all have that go-to dinner that we make once a week or several times a month. It is just easy and we know everyone likes it so we make it over and over and over. I really don’t love cooking. I do it because I love to eat and love to eat healthy. But if my husband and I are both home, he cooks, he likes it more and is maybe just a little bit better at it than I am. Our favorite healthy dinner involves salmon, some veggies and fruit. I just cooked our salmon a new way and it is a game changer for us!
I was inspired to try a new way of cooking our salmon from watching a friend cook hers. I received this amazing Mustard from Finding Home Farms. It is sweetened with a little maple syrup, and oh man it is tasty! I thought our kids would really enjoy the sweet mustard flavor. I have made mustard salmon before, but never in such an easy quick way. Trust me, this is the best way to cook salmon and the healthiest that I have tried.
I bought a nice piece of salmon and put it on top of tinfoil on a baking sheet. Then I coated the top of the salmon with mustard. That’s it! Nothing else added to it.
Then I broiled it in the oven for about 10 minutes, until it looked just like this. All golden on top, with the crispy edges, I love those burnt sides! Then I flipped it over and coated the other side with Mustard (just used two spatulas to do the flip). Then I cooked it for about 8 minutes on the other side, until it looked the same.
I made it when my sisters were in town and they loved it as much as we do. I always pair it with some sort of green veggie. Broccoli is our favorite to sauté on the stove with a little olive oil. We also do asparagus or brussel sprouts the same way.
Mustard is my friend. I really started to like it three years ago when I started eating Paleo. If you aren’t familiar with Paleo it is basically eating only things are natural, have no added sugar and not processed. I use mustard to dip things in that need a little dip and I also use it in my salad dressing. All I use is Apple Cider Vinegar or White Wine Vinegar with mustard and mix it to the consistency that I like for a dressing.
The dressing is basically zero calorie and adds just the right flavor to any salad.
Sweet potato fries are my weakness. We normally make them ourselves but I do like to keep on hand the Alexa brand fries for when we are in a pinch and need to add to a quick meal. That is my kind of cooking, quick and easy. I also have a confession, I have never turned on the barbecuer by myself or barbecued anything. So cooking salmon this way gives it the taste of barbecue.
