“I love you like Biscuits and Gravy”
I wanted to do a special blog post for Father’s Day. Kevin has created a tradition of making biscuits and gravy for our kids. He makes them whenever he has a day off, so it could be Sunday or middle of the week. The girls know their dad is off because they can smell the biscuits baking in the oven.
I have interfered before and asked him to create a paleo friendly version. I thought I would shared that here and his amazing original recipe. Because I have to say he #nailedit. I typically don’t eat his version of biscuits and gravy, I just have one tiny bite or two or three or four and it is really good.
First off you need to make your biscuits. If we don’t have these frozen and ready to use Kevin will just use store bought biscuits. I personally think these paleo friendly biscuits are way better than store bought biscuits. I call them paleo “friendly” because butter is not considered paleo, because of the dairy in it.
Paleo Friendly Biscuits
Ingredients:
- 3 cups Almond flour
- 3 teaspoons baking powder
- 1 ½ teaspoon sea salt
- 4 tablespoons cold butter
- Egg whites from 9 eggs
Instructions:
- Mix almond flour, baking powder and salt together. Use a pastry cutter or forks to work in the butter until crumbly. Do not over mix.
- In a separate bowl whisk the eggs with a fork until they are frothy.
- Blend the eggs in the almond flour mixture with your mastery cutter or forks until just combined.
- Refrigerate for about 20 minutes.
- Clump pieces of the dough together to form your desired size biscuit.
- Bake for 10-12 minutes at 400 degrees until golden brown.
* These can be frozen. I shaped the dough into biscuits and put on a plate and put in the freezer. Once frozen I store them in a plastic freezer bag in the freezer until we want to eat them. When ready to eat place them on a baking sheet while your oven heats to 400 degrees and bake for about 15 minutes, until golden brown.
Paleo Friendly Gravy
Ingredients:
- 8 oz ground sausage
- 1/2 cup coconut flour
- 1/8 cup tapioca flour
- 2 cups unsweetened almond milk
- 4 tablespoons butter
- Salt and pepper to taste (about 1 teaspoon of each)
Instructions:
- Brown the sausage.
- Add the butter and let it melt.
- Add coconut flour and tapioca flour and stir until combined.
- Slowly add the almond milk, 1/2 cup at a time. Cook over medium heat until the gravy thickens to desired thickness. Season with salt and pepper.
Kevin’s Traditional Biscuits and Gravy
Ingredients:
- 8 oz sausage
- 4 tablespoons butter
- 1/2 cup all purpose flour
- 3 cups milk
- Salt and pepper to taste (about 1 teaspoon of each)
Instructions:
- Brown the sausage.
- Add the butter and let it melt.
- Add the flour and stir until combined.
- Slowly add the milk, 1/2 cup at a time. Cook over medium heat until the gravy thickens to desired thickness. Season with salt and pepper.

As soon as you walk in the door from work you take the kids out to the yard and play. You listen to them. You support and encourage them. You see what I miss and makeup for my blindness. There is no contest, you are the favorite and I get it because you are my favorite too. I have yet to see something you can’t do. There is nothing you can’t carry, literally and figuratively.
