It is that time of year to start digging into those holiday recipes. I thought I would share a healthier option for you to add into your baking line-up! These are the only paleo chocolate chip cookies that we make in our house. And I mixed up the recipe, to create a more festive one, Christmas version. I turned one of my families favorite cookie recipes into a paleo version, combined two favorite recipes into one. How can you go wrong? If you are new to paleo eating- in its purest form, the paleo diet allows you to eat only those foods that humans ate when they first roamed the planet millions of years ago. I love eating paleo because of the way it makes me feel. Eating one of these cookies won’t leave your head spinning from sugar or your tummy bloated. Trust me, they are worth trying. If you are worried about eating too many unhealthy goodies at a party- bake these and bring them so you can enjoy a healthier option!
These paleo cookies are so easy to make and are so tasty. You can really use any of your favorite nuts or chocolate chip combo. They don’t have too strong of a coconut flavor. The almond extract adds lot to compensate for the coconut. Don’t you love almond extract? You could use vanilla extract as another option.
I found THIS cookie jar and had to get it for all the cookies we love to bake at our house. THESE dishtowels are new too for Christmas!
Paleo and Gluten Free Cranberry Chocolate Chip Cookies

- 1/4 cup coconut oil
- 1/4 cup coconut sugar
- 2 tablespoons honey
- 1 teaspoon almond extract
- 1 egg
- 2 cups blanched almond flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/3 cup chopped pecans
- 1/3 cup dried cranberries
- 1/3 cup chocolate chips
- Mix coconut oil (not melted), coconut sugar, egg and honey until blended well (about 2 minutes on high). Add in the rest of the ingredients including the nuts and chocolate chips. Mix until everything is covered evenly.
- Scoop about 2 tablespoons of dough onto a greased or parchment lined baking sheet. Bake at 350 degrees for about 6-8 minutes. Lightly smash down cookie after if comes out of the oven.
- I used white chocolate chips in these photos (Kevin's favorite way I make them). White chocolate chips are not paleo. You could use Enjoy Life Chocolate Chips to keep it paleo.
As the cookies come out of the oven I lightly smash them down so they are more cookie like- rather then biscuit like!

These look tasty. I may try them for our annual Cookie Exchange. Assuming you can swap out the coconut oil for another type, as well as the sugar? And have you tried them with dried cherries?
Thanks!
Yes you can swap out the coconut oil for butter and the sugar you could use brown sugar.
I haven’t used cherries, that sounds good tho!
Hello! I am allergic to pecans. Any suggestions for a substitute or leaving them out entirely?
what about walnuts? Or you can for sure leave them out and just add more cranberries or chocolate chips or nothing
These look delicious! I wouldn’t feel guilty for eating two…or three. 🙂
What about whole wheat flour, do you think will work?
I would follow this recipe for non paleo-
http://nestingwithgrace.com/favorite-cookies/
and yes you could do wheat flour
I can’t believe these are paleo approved. Thank you!
Where do you find blanched almond flour? Would that be in the Bob’s Red Mill product line?
They sounds delicious! I think I’ll make them with just pecan and cranberries – I’m not a chocolate chip fan!
These look delish! Thank you for sharing!
Hugs, Jamie
