I LOVE a quick, healthy, one-pan dinner. If I have to pull out multiple pans and tools, it isn’t the recipe for me. Are you like that? Kevin likes to get creative and do all the things I don’t like to do, and often we enjoy his creations, maybe not the mess, bless! I remember listening to a podcast “Happier” that talked about how often households do the “you cook, I’ll clean” but it often isn’t fair if the person who cooks doesn’t clean-up as they go. So we do, “you cook, you clean up” and take turns cooking. Works for us! And works better for our marriage to plan our meals, so we aren’t doing elaborate things when we have a million things going at night. Communication, and planning we are learning. Today I am sharing the easy one-pan chicken dinner that Kevin actually came up with. A dinner I can get on-board with, a one pan dinner! Hope you love it as much as we do!








One Pan Chicken Dinner
Ingredients
- 8 pieces Chicken Breast and or Drumsticks and or Thighs with skin on
- 2 cups Petite Potatoes
- 2 cups Baby Carrots
- 1 medium Onion cut to size of baby carrots
- 1/2 cup Olive Oil
- 1/2 cup Salad Dressing we used Brianna’s Cilantro Lime
- 2 tsp Montreal Seasoning
- 2 tsp Salt
- 1 tsp Pepper
- 1 tsp Garlic Powder
Instructions
- Place chicken, potatoes, carrots and onions on roasting sheet (12"x18")
- Mix oils, dressing and spices in a bowl
- Drizzle mixture across chicken, then use a spatula to cover evenly over chicken
- Bake @400 for 50-60 min, then broil for the last 2-3 for crispier skin
