I can not believe I haven’t shared this cookie recipe with you yet! They are my go-to Paleo Chocolate Chip Cookies. Because cookies are one of my favorite treats and my husbands too. Especially warm out of the oven, they are hard to resist. If you can turn down a warm chocolate chip cookie right out of the oven you have super powers! Am I right?! So I found this Paleo Chocolate Chip Cookies Recipe years ago and adapted it to fit what I like. I was craving something sweet but that also wasn’t packed with white flour, sugar and butter. I was under the assumption that there was no such thing as a Paleo Dessert! I have been pleasantly surprised to find and come up with so many Paleo Desserts that we all love, even more than the other type of sugary treat. A Paleo Dessert can be pretty amazing and even better than what you are used to in my opinion!
If you haven’t noticed from my recipes I love adding nuts! You can easily take these out of this paleo chocolate chip cookie recipe and add in unsweetened coconut flakes, cranberries, raisins or anything else you can think of! If you are not strict Paleo you could add gluten-free oats too.
You can lightly chop the nuts or throw them in your mixer and let them get chopped up that way! I used pecans, but also love walnuts in these cookies. (BTW I get asked all the time- found similar gold measuring cups HERE).
The original recipe called for Ghee (that is a butter that does not have cream in it, basically the cream is taken off the top). Ghee can be expensive and hard to find. So I use coconut oil and you don’t even have to melt it. Just make sure to stir it long enough that it gets blended in well and no big chunks are visible. I also used pure maple syrup rather than honey, I just didn’t like how strong the honey flavor was, I think it is far less noticeable than the maple syrup. But either would work in this recipe.
Also I use THIS scoop, it is about 2 tablespoons of dough. Make sure to smash down the cookie dough with a spatula or a cup BEFORE baking them. If you don’t smash them down they will not flatten out on their own- they still taste good but look like a biscuit.
Paleo Chocolate Chip Cookies
Makes about 18 cookies…doubling the recipe is recommended!
- 1/4 cup coconut oil (not melted)
- 1/4 coconut sugar
- 2 tablespoons maple syrup
- 1 egg
- 1 3/4 cups blanched almond flour
- 2 tablespoons coconut flour
- 1/2 teaspoons baking soda
- 1/4 teaspoon salt
- 1/3 cup chopped nuts
- 1/3 cup chocolate chips (Enjoy Life Chocolate Chips are considered Paleo because they are dairy free)
Mix coconut oil, coconut sugar and maple syrup until blended really well together. Add in egg and mix well. Pour in the rest of the ingredients including the nuts and chocolate chips all at once. Mix until everything is covered evenly. Scoop about 2 tablespoons of dough on a greased or parchment lined baking sheet. Smash down each cookie before baking. Bake at 350 degrees for 8 minutes.

Can’t wait to try this! Thank you. (It is easy to make your own ghee from organic, unsalted butter. Melt and simmer over medium heat while stirring constantly. Use a larger spoon to skim the dairy foam and bubbles from the top. If you want a richer, more nutty taste- wait until you see chestnut colored particles at the bottom of the pan. Pour into a glass container and cool. May keep on counter. Use a gravy separator or cheesecloth to strain particles – or just pour carefully. Adds much flavor to rice, oatmeal, veggies, etc. Sometimes I store mine in a Butter Bell.

My daughter has a nut allergy. Is there a way to make these without nuts or almond flour?
