My mom has made this salad as long as I can remember! When salad meets pasta…great things happen! This salad has such a yummy teriyaki flavor, with different ingredients making it so unique and tasty. We’ve perfected the recipe to just the things we all love and will eat. Every time I bring this salad somewhere to share, everyone wants the recipe. This will be your go-to for every gathering!

You can easily add chicken to this spinach pasta salad. If you decide to add chicken, you’ll marinade the chicken in teriyaki sauce overnight, then grill and cut. I LOVE this salad with the chicken. But I don’t add if we will be having a main dish of meat and this is just a side. When I make for showers or gatherings where the food is mainly salads or sandwiches I add chicken or if this is our dinner!

First get the bowtie noodles cooking. I like to cook them al dente. Just follow the package directions.

While the noodles are cooking, make the dressing. Just a few simple ingredients, we really love how the white vinegar has a strong flavor!

After the noodles are cooked you’ll throw them into the dressing and mix well. There will be enough dressing to give the noodles lots of flavor but then to coat the spinach and other ingredients when you put the whole salad together.

Cover and put in the fridge for at least an hour. I usually do this over night so the noodles have a good flavor to them. I mix the noodles often so they get fully coated. PS- I LOVE this glass bowl set with lids to easily transfer to the fridge or take with you!

Now we assemble the salad. Start with the spinach then add the rest of the toppings.

This is how I leave it until it’s time to eat, Don’t mix until its time to eat. You don’t want the spinach getting soggy.

When you are ready to eat toss the salad well and serve.

Ingredients

Dressing Marinade

1/2 cup olive oil
2/3 cup teriyaki sauce
2/3 cup white vinegar
3 tbsp sugar
1 tsp salt
1/2 tsp pepper

Salad Ingredients

16 oz bowtie pasta
1 tsp salt
1 10 oz bag fresh spinach
1 cup craisins
3 10 oz cans mandarin oranges
3 tbsp toasted sesame seeds
1 cup honey roasted peanuts
2 cups grilled chicken (optional)

Method

Cook pasta according to package instructions, drain and rinse with cold water. Set aside.
Mix dressing ingredients add to cooked pasta and chill for at least an hour.
Add spinach over pasta and then add other ingredients. Toss together salad ingredients and pasta just before serving.

Notes

Optional- Marinade Chicken in Teriyaki Sauce then Grill Chicken and add to salad
