I love a lettuce wrap, really the whole family loves this meal! This is my go-to meal, especially in summer, just so refreshing and doesn’t feel hot or heavy. So much flavor in one bite. A healthier dinner option, one that and each person can customize to their liking. We also love that they can be assembled quick. Not to mention all the ingredients look so pretty on a large serving board, perfect for a large gathering. Easy and affordable!

So much flavor and color in these healthy lettuce wraps. The most time consuming part is chopping vegetables, but most vegetables you can buy pre-chopped. For the protein we like to use a rotisserie chicken or ground chicken.

Then, trust me, you are going to want this peanut sauce! You can buy peanut sauce, I just really love how this one tastes and a healthier option, so I’m always willing to take a few extra minutes to make it. I have the recipe below! You can also serve as dipping sauces Soy Sauce (or Coconut Aminos), and Sweet Chili Sauce.

In my lettuce wrap I love chicken, peanuts, cucumber, shredded carrots, red and yellow peppers, squeeze of lime and peanut sauce! Sooooo good!

I think the addition of thin rice noddles to the lettuce wraps make the meal more appealing to kids, so it isn’t just vegetables, a little more filling too.
